Brassica vegetables increase and apiaceous vegetables decrease cytochrome P450 1A2 activity in humans: changes in caffeine metabolite ratios in response to controlled vegetable diets.

Induction or inhibition of biotransformation enzymes, enzymes that activate or detoxify numerous xenobiotics, is one mechanism by which vegetables may alter cancer risk. Using a randomized crossover design, we examined the effect of various vegetable diets on cytochrome P450 (CYP) 1A2, N-acetyltransferase 2 (NAT2) and xanthine oxidase activity in humans. Men and women, non-smokers, on no medication and 20-40 years of age ate four 6-day controlled diets: basal (vegetable-free) and basal with three botanically defined vegetable groups. Enzyme activities were determined by measuring urinary caffeine metabolite ratios after a 200 mg caffeine dose on the last day of each feeding period. Mean CYP1A2 activity for 19 men and 17 women (least squares means adjusted for sex, GSTM1 genotype, urine volume and feeding period) with basal, brassica, allium and apiaceous vegetable diets differed significantly (P </=ISOdia</= 0. 0005) by diet, irrespective of the caffeine metabolite molar ratio used to describe CYP1A2 activity; brassica vegetables increased (P <0.04) and apiaceous vegetables decreased (P </=ISOdia</= 0.02) activity compared with the basal and allium diets. There was no effect of diet on NAT2 and xanthine oxidase activities and none of the subjects differed by GSTM1 genotype. These results demonstrate that while one vegetable subgroup induces human CYP1A2 activity, another subgroup inhibits it. This points to a complex association between consumption of a typical diet of various vegetables and biotransformation enzyme activities in humans, an association that may be difficult to interpret in observational studies.

[Patulin in foods of vegetable origin. 2. Several kinds of fruit and vegetables and fruit and vegetable products (author's transl)].

Patulin was found in fruit with spontaneous brown rot (bananas, pineapples, grapes, peaches, apricots) as well as in moldy compots and in sallow-thorn juice. Fruit, vegetables and fruit and vegetable product were artificially infected with Penicillium expansum, P. urticae and Byssochlamys nivea; patulin was subsequently found in peaches, apricots, greengages, bananas, strawberries, honeydew melons, tomatoes, red and green paprika, cucumbers and carrots; in several kinds of compot, in tomato juice and tomato pulp --but not in ketchup. The influence of the temperature on growth and toxin production is different in the various fungal strains; in the temperature range of 5 degrees C to 25 degrees C, however, the possibility of patulin synthesis must nearly always be expected.

Vegetal egg cytoplasm promotes gastrulation and is responsible for specification of vegetal blastomeres in embryos of the ascidian Halocynthia roretzi.

An animal-vegetal axis exists in the unfertilized eggs of the ascidian Halocynthia roretzi. The first phase of ooplasmic segregation brings the egg cortex to the vegetal pole very soon after fertilization. In the present study, when 5-8% of the egg cytoplasm in the vegetal pole region was removed between the first and second phase of segregation, most embryos exhibited failure of gastrulation, as reported previously in Styela by Bates and Jeffery (Dev. Biol, 124, 65-76, 1987). The embryos that were deficient in vegetal pole cytoplasm (VC-deficient embryos) developed into permanent blastulae. They consisted for the most part of epidermal cells and most lacked the derivatives of vegetal blastomeres, such as endoderm, muscle and notochord. Removal of cytoplasm from other regions did not affect embryogenesis. The cleavage of the VC-deficient embryos not only exhibited radial symmetry along the animal-vegetal axis but the pattern of the cleavage was also identical in the animal and vegetal hemispheres. Examination of the developmental fates of early blastomeres of VC-deficient embryos revealed that the vegetal blastomeres had assumed the fate of animal cells. These results suggested that the VC-deficient embryos had been totally animalized. When vegetal pole cytoplasm was transplanted to the animal pole or equatorial position of VC-deficient eggs, gastrulation occurred, starting at the site of the transplantation and tissues derived from vegetal blastomeres formed. Therefore, it appears that vegetal pole cytoplasm specifies the site of gastrulation and the cytoplasm is responsible for the specification of vegetal blastomeres. It is suggested that during the second phase of ooplasmic segregation, cytoplasmic factors responsible for gastrulation spread throughout the entire vegetal hemisphere.

Incidence of parasites found on vegetables collected from markets and vegetable gardens in Taegu area.

A parasitic survey on vegetables collected from markets and vegetable gardens in Taegu area was conducted for the discovery of human parasitic eggs and larvae. Three species of vegetable, lettuce (Lactuca sativa), young radish(Raphanus sapivus) and Chinese cabbage (Brassica pekinensis) were selected. All vegetable leaves were washed with a hard brush, and then species of parasites and the approximate mean number of parasitic eggs per 200 grams of vegetable leaves were investigated. When vegetables collected from markets were examined, 5 species of parasite eggs (ascarid, trichurid, Trichostrongylus, Clonorchis and hookworms) and 2 larvae (filariform and rhabditoid ) were found. Furthermore, a number of eggs and larvae of undetermined species were also observed. Of the parasites studied, ascarid egg was found to be highest (49.0%), followed Trichostrongylus egg(18.0%) as well as filariform larva of hookworms (19.7%), and the least often observed was rhabditoid larva of hookworms(0.7%). The recovery rate of parasites among lettuce, young radish and Chinese cabbage collected from markets ranged from 23.2 to 91.9 percent and was similar to that from vegetable gardens, where Chinese cabbage showed the highest (91.1%) and lettuce being next(49.0%) in positivity of ascarid eggs. In the case of filariform larva, the rate of Chinese cabbage was twice as high as that of lettuce and young radish. There was a significant reduction in the rate of filariform larva, suggesting that a single washing of vegetables at the vegetable washing stand would reduce the number of parasites attached to vegetable leaves, when young radish washed at the stand was compared with that unwashed. In the monthly rate of parasites recovered from young radish, there was significant fluctuations between the eggs and filariform larva of hookworms. The mean number of ascarid egg per 200 grams of vegetable was 7.5 in young radishes, 3.1 in lettuces, and 0.5 in Chinese cabbages, in decreasing order. It is noteworthy that young radish contained more than 10 times more than Chinese cabbage. These results would seem to indicate that one of the important routes of infection is due to consumption of pickled young radishes in summer than pickled Chinese cabbages in winter.

Comparison of serum carotenoid responses between women consuming vegetable juice and women consuming raw or cooked vegetables.

The objective of this study was to examine serum concentrations of alpha-carotene, beta-carotene, lutein, lycopene, and beta-cryptoxanthin due to consumption of vegetable juice versus raw or cooked vegetables. Subjects included female breast cancer patients who had undergone surgical resection and who were enrolled in a feasibility study for a trial examining the influence of diet on breast cancer recurrence. A high-vegetable, low-fat diet was the focus of the intervention, and some of the subjects were specifically encouraged to consume vegetable juice. At 12 months, blood samples were collected and analyzed for carotenoid concentrations via high-performance liquid chromatography methodology. Matched analysis and paired t test were conducted on two groups: those who consumed vegetable juice (the juice group) and those who consumed raw or cooked vegetables (no juice group). Serum concentrations of alpha-carotene and lutein were significantly higher in the vegetable juice group than in the raw or cooked vegetable group (P < 0.05 and P = 0.05, respectively). Paired t test analysis did not demonstrate a significant difference in serum values of beta-carotene, lycopene, and beta-cryptoxanthin between subjects consuming juice and those not consuming any juice. These results suggest that alpha-carotene and lutein appear to be more bioavailable in the juice form than in raw or cooked vegetables. Therefore, the food form consumed may contribute to the variability in serum carotenoid response to vegetable and fruit interventions in clinical studies.

[Nitrate accumulation in vegetables and its residual in vegetable fields].

Determinations of 11 kinds, 48 varieties of vegetables were carried out at different seasons. The results showed that nitrate-N concentrations in 20 vegetables reached Pollution Level 4 (NO3(-)-N > 325 mg.kg-1), which accounted for 41.7% of the total number of the sampled vegetables and included all of the leafy, and most of the melon, root, onion and garlic vegetables. Among them, 5 leafy vegetables even exceeded Level 4 (NO3(-)-N > 700 mg.kg-1). Although leafy vegetables were usually apt to heavily accumulate nitrate, most of them were with nitrate-N concentrations lower than Level 3 (NO3(-)-N < 325 mg.kg-1) in leave blades. Further investigation showed that vegetable soils accumulated more nitrates in each layer from 0 cm to 200 cm than did cereal crop soil. The total amount of residual nitrate-N was 1358.8 kg.hm-2 in the 200 cm soil profile of usual vegetable fields, and 1411.8 kg.hm-2 and 1520.9 kg.hm-2 in the 2-yaers and the 5-years long plastic greenhouse fields respectively, however that in the cereal crop fields was only 245.4 kg.hm-2. Nitrate residual in vegetable soils formed serious threats to underground water in vegetable growing areas.

Comparative bio-antimutagenicity of common vegetables and traditional vegetables in Kyoto.

Traditional vegetables in Kyoto are a unique group of vegetables that have been cultivated in limited areas near Kyoto city. We compared the traditional vegetables in Kyoto with common vegetables for the bio-antimutagenicity of their extracts against UV-induced mutation of E. coli B/r WP2. Among the traditional vegetables in Kyoto, Kamo eggplant (Solanaceae) and Katsura oriental pickling melon (Cucurbitaceae) showed higher bio-antimutagenicity and yield in the n-hexane, chloroform and ethyl acetate fractions than their common vegetable counterparts. Shishigatani pumpkin (Cucurbitaceae) possessed bio-antimutagenicity in the chloroform and ethyl acetate fractions, but common pumpkin did not. Polyphenolic compounds in the ethyl acetate fraction of plants are known to be related to antimutagenicity. However, the intensity of bio-antimutagenicity was not correlated with the polyphenol content in the ethyl acetate fractions of the present vegetables. In particular, Kamo eggplant possessed both polyphenolic and non-polyphenolic bio-antimutagenic sub-fractions in the ethyl acetate fraction. In the aqueous fraction, taro (Dioscoreaceae) was the most capable among our samples, whether being of common or traditional origin. Consequently, it is considered, that some traditional vegetables in Kyoto are superior to common vegetables in their bio-antimutagenicity and that these could be used as starting materials to identify new bio-antimutagens.

Influence of feeding different vegetables on plasma levels of carotenoids, folate and vitamin C. Effect of disruption of the vegetable matrix.

Carotenoids, folate and vitamin C may contribute to the observed beneficial effects of increased vegetable intake. Currently, knowledge on the bioavailability of these compounds from vegetables is limited. We compared the efficacy of different vegetables, at the same level of intake (i.e. 300 g/d), in increasing plasma levels of carotenoids, folate and vitamin C and we investigated if disruption of the vegetable matrix would enhance the bioavailability of these micronutrients. In an incomplete block design, sixty-nine volunteers consumed a control meal without vegetables and three out of four vegetable meals (i.e. broccoli, green peas, whole leaf spinach, chopped spinach; containing between 1.7 and 24.6 mg beta-carotene, 3.8 and 26 mg lutein, 0.22 and 0.60 mg folate and 26 and 93 mg vitamin C) or a meal supplemented with synthetic beta-carotene (33.3 mg). Meals were consumed for 4 d and fasting blood samples were taken at the end of each period. Consumption of the spinach-supplemented meal did not affect plasma levels of beta-carotene, although the beta-carotene content was 10-fold those of broccoli and green peas, which induced significant increases in plasma beta-carotene levels (28 (95% CI 6.4, 55)% and 26 (95% CI 2.6, 54)% respectively). The beta-carotene-supplemented meal increased plasma concentrations of beta-carotene effectively (517 (95% CI 409, 648)%). All vegetable meals increased the plasma concentrations of lutein and vitamin C significantly. Broccoli and green peas were, when expressed per mg carotenoid consumed, also more effective sources of lutein than spinach. A significant increase in plasma folate concentration was found only after consumption of the spinach-supplemented meal, which provided the highest level of folate. Disruption of the spinach matrix increased the plasma responses to both lutein (14 (95% CI 3.7, 25)%) and folate (10 (95% CI 2.2, 18)%), whereas it did not affect the response to beta-carotene. We conclude that the bioavailabilities of beta-carotene and lutein vary substantially among different vegetables and that the bioavailabilities of lutein and folate from spinach can be improved by disruption of the vegetable matrix.

[Sleep in vegetative state patients and recuperated cases from vegetative states (author's transl)].

Twenty-four hours polygraphic recording of EEG, electrooculogram and EMG were performed on 8 vegetative state patients and 4 recuperated cases, and the differences of the sleep pattern between two groups were discussed. It was difficult to divide the sleep pattern into normal four stages, because the frequency of EEG in vegetative state patients were very slow. So we divided it into the following 4 patterns; awake, shallow sleep, deep sleep and REM sleep. The sleep in vegetative state patients was interrupted by short duration and appeared at random during day and night. The amount of sleep in vegetative state patients increased proportion to severity of vegetative state. Rate of shallow sleep of them was high. REM sleep was seen in all the cases, but its cycle and lasting time were different in each case. The rate of shallow sleep prior to REM sleep was lower than normal pattern and the change of sleep state was atypical. Few hump and spindle wave appeared. For the reasons mentioned above, the sleep pattern in vegetative state patients was far from physiological sleep. On the other hand, the sleep in recuperated patients was more similar to the normal pattern than that of vegetative cases, but the rate of shallow sleep was as high as the vegetative cases. REM sleep was irregular and the change of sleep was also atypical. Therefore, the sleep pattern in recuperated patients was also far from physiological sleep, though it was better than that of vegetative cases.

High linoleic acid, low vegetable, and high oleic acid, high vegetable diets affect platelet activation similarly in healthy women and men.

Upregulation of protein kinase C (PKC), an important enzyme in platelet activation, could be one step toward platelet hyperactivity. PKC activation can be modulated by dietary components in vitro, but few data are available concerning the in vivo effects. In this strictly controlled human dietary intervention, the influence of dietary unsaturated fatty acids and vegetable compounds on platelet activation was investigated. A high linoleic acid diet (10% of energy) with small amounts of vegetables (no berries or apples) was consumed by 9 women and 4 men (24.1 +/- 3.9 y), and was compared with a high oleic acid diet (12% of energy) with considerable amounts of vegetables, berries and apples consumed by 8 women and 4 men (24.2 +/- 5.5 y). Subjects were healthy Finnish volunteers. Compliance with the experimental protocol was good, as indicated by changes in plasma fatty acids and concentrations of vitamin C, beta-carotene and alpha-tocopherol. No differences between groups were seen in indices of platelet activation, including platelet aggregation, total PKC activity and distribution of PKC isoenzymes alpha, beta(II) and delta. The results indicate that in apparently healthy and fairly young subjects with adequate vitamin intakes, diets differing markedly in their amounts of linoleic and oleic acids, and vegetables, berries and apples do not differ in platelet activation.

Reduced plasminogen activator inhibitor activity in high consumers of fruits, vegetables and root vegetables.

We studied a cross-sectional sample of 260 subjects aged 30-60 years, in order to assess the relation between food intake habits and factors of the fibrinolytic system. Plasma samples of tissue plasminogen activator (tPA) antigen, and plasminogen activator inhibitor (PAI-1) activity were obtained for the assay. The dietary pattern was determined using a food frequency questionnaire, according to which the subjects were grouped as high, low or medium consumers. The subjects who were high consumers of fruit, vegetables, and root vegetables showed the lowest levels of PAI-1, those who were low consumers had the highest levels, whereas the medium consumers showed intermediate values. The tPA levels did not differ between the three groups, and there were no significant differences in other variables that covaried with PAI-1 levels, such as age, anthropometric variables, or serum lipid levels, which could confound the PAI-1/food pattern relationship. The data, which show that a frequent intake of fruit, vegetables, and root vegetables--foodstuffs rich in vitamin C and fibre--is associated with lower PAI-1 levels, are consistent with increased activity of the fibrinolytic system and thus a reduced risk of thromboembolic and cardiovascular disease in subjects who exhibit this food intake pattern.

[Clinicopathological studies of the vegetative state--distinction between the vegetative state and brain death].

10 cases showing vegetative state and 2 cases of brain death due to severe brain damage were observed and the differences of clinicopathological findings between both states were discussed. The cases of vegetative state can be divided into three groups, first is widespread lesion in the cerebral cortex, second is in the cerebral white matter and third is in the brain stem. While, the diffuse whole brain damage including the vegetative center of the central nervous system causes brain death. We should like to emphasize that the most important structure to maintain the human life is the vital center in the brain stem, and that a human being, in whom only those function can be preserved, is possible to be alive as vegetative state. Prognostic value of the EEG indicating quality of survival noted in early stage after severe brain damage has not so important as the flat EEG revealed in brain death.

[Characterization of the vegetative-nervous response of dogs and the vegetative-nervous interaction between dogs and dog trainers by noninvasive measurement of skin potentials].

The study involved a total of 5 pairs consisting of dog and dog trainer who were examined by continuous noninvasive recording of skin potentials within the scope of a defined exercise program. The exercise program consisted of the following phases: preparatory free run exercise (16 min in duration), exercise in submission (4 min in duration), follow-up phase with free run (16 min in duration). The objective of the study was to demonstrate the possibility to register, by means of skin potential recordings, the vegetative-nervous behavior of dogs and the vegetative-nervous interaction between dog and dog trainer. The tests carried out with dogs and humans showed that it was possible to verify behavior-specific traits of dogs by means of time-series analysis of the data registered. It was demonstrated that especially the frequency distribution of a regulatory function, such as the parameter skin potential, permits the detection of characteristic behavioral traits. By means of a newly developed method for determining a dynamic cross-correlation, the vegetative-emotional interaction could be demonstrated during the submission exercise. By using typical exercise patterns (shot, walking, "down", etc.), it was demonstrated that "shot" lead to deterioration of the vegetative-nervous relationship in all pairs. Having the dog "sit" and praising it lead to a positive correlation in all pairs. The command "down" lead to deterioration of the correlation in three pairs.

[On the phenolic acids of vegetables. IV. Hydroxycinnamic acids and hydroxybenzoic acids of vegetables and potatoes (author's transl)].

Lettuce, endive and chicory exclusively, cornsalad and sweet fennel almost exclusively contain caffeic acid derivatives beside traces of ferulic acid. Parsley exclusively and spinach almost exclusively show p-coumaric acid derivatives. Compared to root, fruit and seed vegetables the contents of phenolic acids in green leaves are considerably high. Rhubarb is the only vegetable, which contains gallic acid (chief phenolic acid) beside hydroxycinnamic, protocatechuic and vanillic acid derivatives. Furthermore hydroxybenzoic acid derivatives (salicylic, gentisic and vanillic acid) occur in cornsalad, sweet fennel, parsley and spinach in small concentrations; cornsalad shows p-hydroxybenzoic acid (ca. 20 mg/kg). Onions (Allium cepa) contain almost only protocatechuic acid beside small amounts of p-hydroxybenzoic and vanillic acid. In the outer dry coloured skins protocatechuic acid reaches concentrations up to 2% of plant material; the internal pulpy tissues show lower concentrations (ca. 20 mg/kg). On the contrary to the bulbs the green leaves of onions like chive and leek contain almost exclusively compounds of ferulic and p-coumaric acid. Garlic even shows a different phenolic acid pattern of skins and internal tissues. The caffeic acid derivatives of potatoes are mainly localized to a 1--2 mm thick outer layer. The different localization of phenolic acids in the different parts of vegetable plants is discussed.

[Studies on pickled vegetables and cause of esophageal cancer in Linxian. I. Experiments on carcinogenicity of pickled vegetables].

Pickled vegetables are a traditional daily food served in several parts of China where esophageal cancer is prevalent, and the mortality rate due to this cancer appears to be correlated with the time span of consumption and the amount consumed. For the present study epithelial hyperplasia and papillomas of the esophagus and forestomach were induced in mice and rats following administration of condensed juice from or extract of pickled vegetables from Linxian County, Henan Province. Only one case of forestomach carcinoma was observed in a rat subsequent to prolonged treatment with pickled extract, indicating that carcinogens in pickled vegetables alone are probably incapable of inducing carcinogenesis.

Particles and vegetation: implications for the transfer of particle-bound organic contaminants to vegetation.

This paper presents a comprehensive review of the mechanisms responsible for the transfer of atmospheric particulate deposition and soil particulate re-suspension onto vegetation. The nature of atmospheric aerosols and dry/wet particulate deposition are reviewed, together with information from the literature on radionuclides as tracers of the air particle/soil particle to vegetation transfer processes. Information from these fields is used to make inferences about the potential significance of these pathways in supplying particle-bound semi-volatile organic chemicals (e.g. polycyclic aromatic hydrocarbons, polychlorinated dibenzo-p-dioxins and dibenzofurans, polychlorinated biphenyls) to vegetation. Retention of compounds on particles brought to the above-ground plant surfaces is discussed. In the absence of definitive field/experimental studies, calculations are made drawing on the literature data to estimate the contributions of atmospheric and soil particle-bound organic contaminants to the plant concentration. These show that depending on the site-specific, species-specific and compound-specific scenarios considered, particulate-bound inputs may be negligible or may dominate the supply of organic contaminants to the above-ground portion of plants. However, field/experimental studies and direct measurements are needed to provide reliable quantitative data on this topic.

Runoff loss of pesticides and soil: a comparison between vegetative mulch and plastic mulch in vegetable production systems.

Current vegetable production systems use polyethylene (plastic) mulch and require multiple applications of agrochemicals. During rain events, runoff from vegetable production is enhanced because 50 to 75% of the field is covered with an impervious surface. This study was conducted to quantify off-site movement of soil and pesticides with runoff from tomato (Lycopersicon esculentum Mill.) plots containing polyethylene mulch and a vegetative mulch, hairy vetch (Vicia villosa Roth). Side-by-side field plots were instrumented with automated flow meters and samplers to measure and collect runoff, which was filtered, extracted, and analyzed to determine soil and pesticide loss. Seasonal losses of two to four times more water and at least three times as much sediment were observed from plots with polyethvlene mulch (55.4 to 146 L m(-2) and 247 to 535 g m(-2), respectively) versus plots with hairy vetch residue (13.7 to 75.7 L m(-2) and 32.8 to 118 g m(-2), respectively). Geometric means (+/-standard deviation) of total pesticide loads for chlorothalonil (tetrachloroisophthalonitrile) and alpha-and beta-endosulfan (6,7,8,9,10,10-hexachloro-1,5,5a,6,9,9a-hexahydro6,9-methano-2,4,3-benzodioxathiepin 3-oxide) for a runoff event were 19, 6, and 9 times greater from polyethylene (800+/-4.6, 17.6+/-3.9, and 39.1+/-4.9 microg m(-2), respectively) than from hairy vetch mulch plots (42+/-6.0, 2.8+/-5.0, and 4.3+/-4.6 microg m(-2), respectively) due to greater concentrations and larger runoff volumes. The increased runoff volume, soil loss, and off-site loading of pesticides measured in runoff from the polyethylene mulch suggests that this management practice is less sustainable and may have a harmful effect on the environment.

[Ecological study on relationship between desertification process and vegetation dynamics in west of northeast China: vegetation classification].

Based on the data obtained from 72 plant community plots and 276 plant species in Hulunbeier Sandy Land and Kerqin Sandy Land in the northeast desertification region of China, TWINSPAN analysis was carried out. Meanwhile the practical classification result was obtained by Detrended correspondence Analysis (DCA). Under the vegetation classification principles of China, the vegetation classification system of the desertification regions in northeast China was preliminarily established, which includes 6 vegetation types, 11 subtypes, 40 formations, and 55 associations.
