It is common practice in rural areas of The Gambia to prepare infant foods in quantities which are sufficient to meet the needs of the day rather than one meal. These are then stored at ambient temperatures for periods up to 12 hours for feeding to the child on demand. The total viable counts and levels of Bacillus cereus, Clostridium welchii, Staphylococcus aureus and Escherichia coli were determined in 294 infant foods samples from nought to eight hours after preparation. The presence of Salmonella was determined in 10 g samples of food. In the first hour after preparation the proportion of foods dangerously contaminated was high during the rainsy season, significantly more so than during the dry season. Foods not consumed fresh were very often hazardous and almost always so after 8 hours. This problem may be a causal factor in weanling diarrhoea which also shows marked seasonal variation in prevalence.

The lead contents in more than 120 glass bottles or packages of infant foods were determined. About 75% of the values were below 100 mug Pb/kg of product. The highest value was 238 mug Pb/kg. The weekly intake of a 6 month-old infant (7.2 kg body weight) fed exclusively with commercial baby foods was found to be about 320 mug Pb, or about 45 mug Pb/kg body weight.
Declining breast-feeding, with accompanying increased marasmus and diarrhea, has occurred in developing countries because of many factors, including inappropriate health services, new urban life styles, and so forth. The infant food industry must bear a considerable burden of blame as a result of "unethical" advertising. Responses have most recently included various journalistic and legal actions. There is a need for revised roles for the infant food industry, and for mechanisms to monitor intrinsically harmful practices.

The authors report of a modification to the vitamin B1 determination (thiochrome method) according to the Specification TGL 18230. Extract purification is considerably simplified by using the KPS cation exchanger. The measurements were performed by means of the Spekol spectrophotometer with fluorescence attachment. In this way, also industrial laboratories with modest outfit are enable to make vitamin B1 determinations. Already after 2-3 months of storage, the thiamine values of the fruit and vegetable baby foods tested lay in part at the lower limit of the stated values. Possibilities of improving the thiamine values are discussed.
