Gender difference in cereal intake: possible impacts of social group affiliation and season.

Food may not be equitably distributed within the household. The distribution depends on some factors, one of which is availability of food. The generalised proposition of gender bias against women in the distribution of food in South Asia has been examined here in three culturally contrasting population groups in two seasons, viz. lean and peak. The result shows that in all the three groups, in all household membership categories, the intake of cereal is higher than the recommended intake, but the male-female differences in net intakes are higher in peak season than in lean season.

PCR analysis of half-seeds of cereal crops and its application in marker-assisted selection and breeding.

A simple and rapid PCR method was adapted to DNA analysis of cereal seeds. Half-seeds of rice, wheat, and maize were treated with an extraction buffer and the resulting supernatants were used in PCR and RAPD reactions. PCR products amplified from the half-seed DNA extracts were identical with that from leaf tissue DNA extracts when the same specific primers were used in PCR reactions. The remaining half-seeds with embryos could still germinate normally. The half-seed PCR analysis was applied to the identification of resistant genotypes of rice bacterial blight, and it was proved effective in plant breeding and genetic studies.

[The build up of absorbed doses in the critical organs of cereal grains in a contaminated area after the accident at the Chernobyl Atomic Electric Power Station].

The calculation method for absorbed doses of ionizing radiations in critical organs of cereals during the first vegetation period after the ChNPP accident is presented. Calculation of radiation burden on plants nearly 5 settlements in the 30 km zone of ChNPP accident are carried out. gamma-radiation of radionuclide fallouts is demonstrated to give the main contribution into absorbed dose and dose ratio beta- to gamma-radiation varied within the range from 5 to 10 depending on radionuclide composition of fallouts.

Screening method for the detection of aflatoxins, ochratoxin, patulin, sterigmatocystin, and zearalenone in cereals.

A screening method has been developed for the detection of aflatoxins, ochratoxin A, patulin, sterigmatocystin, and zearalenone in cereals. After extraction, the sample is cleaned up by gel filtration. The mycotoxins are separated by thin layer chromatography. The limits of detection are about 5 microgram aflatoxins, 10 microgram ochratoxin A, 50 microgram patulin, 10 microgram sterigmatocystin, and 35 microgram zearalenone/kg.

[Hygienic assessment of chemical soil pollution and quality of cereals under conditions of sewage irrigation].

Sewage irrigation of farming lands can affect the translocation of heavy metals from soil to plants. Metal mobility is likely to be due to the increased content of toxic substances and surfactants in the sewage. Therefore, it is necessary to modify an approach to growing cereals in the farming lands irrigated by sewage, by reducing the unfavourable effects on the environment and public health.

[Chemical and nutritional assessment of a soybean and cereal mixture for adults].

Legume seeds and fibre rich plant foods usually improve aspects of human diabetes control as they are potential sources of "delayed release" carbohydrates. A regional bakery mixture of soybean and cereals, interesting for its palatability and high content in non starch polysaccharides was chemically and nutritionally evaluated. Comparisons were made with the usual commercial laboratory chow and with a cafeteria mixture. Each one of the three diets was offered ad libitum to adult rats of line IIMb/Fm beta (beta), affected by obesity, hypertriglyceridemia and glucose intolerance or diabetes. Treatments lasted three months and were performed on two groups of male rats: (a) From 100 days old growing significantly. (b) From 200 days old. Meals had similar carbohydrate and calorie contents but acid followed by enzymatica hydrolysis was required to free monosaccharides from the soybean mixture. Cafeteria mixture lacked in fibre, was rich in saturated fats and sodium, and it caused hyperphagia. Each group of rats showed similar food intakes in both ages although weight gain was significantly higher in the younger animals. In the latter, values of glycemic response showed no difference between diets. Cafeteria mixture caused significant hyperglycemia to the elder rats, while the soybean bakery mixture produced a remarkably lower glycemic response; in one case it was even lower than the one produced by the commercial chow. Differential response showed more clearly with age. The results of the feces analysis demonstrated an increased proportion of fecal water for the bakery mixture group, probably due to the amount of undigestible fibre, inducing beneficial effects on large bowel functionality.

Multistate outbreak of Salmonella serotype Agona infections linked to toasted oats cereal--United States, April-May, 1998.

During April-May 1998, a total of 11 states reported an increase in cases of Salmonella serotype Agona infections; as of June 8, a total of 209 cases have been reported and at least 47 persons have been hospitalized, representing an eightfold increase over the median number of cases reported in those states during 1993-1997. The states reporting increases were Illinois (49 cases), Indiana (30), Ohio (29), New York (24), Missouri (22), Pennsylvania (20), Michigan (15), Iowa (eight), Wisconsin (six), Kansas (four), and West Virginia (two). This report summarizes the outbreak investigation by local, state, and federal public health officials, which implicated Millville brand plain Toasted Oats cereal manufactured by Malt-O-Meal, Inc. as the cause of illness.

Effects of cereal supplementation with selenium.

Selenium (Se) is an essential nutrient. Surveys of Se status showed that Serbia is a low Se area. To increase the Se concentration, we supplemented Se to domestic animals and humans. The latest results showed that increasing Se content in domestic animals and humans induces a small increase in mean Se level. Exceptions were residents of urban, economically developed communities in which an increase in Se level were significant. The soil-plant system is the main natural source of Se for animals and humans. We used field treatments to raise the Se level in plants to the desired level. Foliar application of Se as Na2SeO3 was tested on cereals growing on different soil types. The influence of different growth factors on the uptake and distribution of Se in plants was tested and discussed. The foliar application of 6 g Se/ha is sufficient to raise the native Se content in whole wheat to levels of 42 to 67 microg/kg and in corn to levels of 19 to 36 microg/kg. The application of 12 g Se/ha is sufficient to raise Se levels in wheat to 65 to 180 microg/kg and in corn to 31 to 46 microg/kg.

[Nutritional characteristics of cereal and peanut bars].

Snack with good nutritional value could play an important role in the physical and mental development of children and teenagers since they show a great preference for them. The tendency is increasing their nutritional value by supplying proteins, carbohydrates, fiber, vitamins and minerals in a balanced form. The purpose of this research was to evaluate the chemical, sensorial and nutritional quality of cereal and peanut bars. Three types of bars using different ratios of oat, wheat germ, peanut, toasted and expanded amaranthus and wheat extrudate were prepared. Bars proximate composition was determined according the AOAC methods, and their acceptability according Hedonic Scale. In the biological assays, rats fed with 10% protein diets, were used to obtain the Protein Efficiency Ratio (PER) Net Protein Ratio (NPR) and Apparent Digestibility (AD). Corrected PER, relative PER, relative AD, PER and NPR values did not showed difference between bars CM1 and CM2 (PER: 2.59-2.57; NPR: 3.99-3.95 respectively); CM3 bar showed a lower quality. There were not differences among bars in relation to AD. CM1 and CM2 bars had a better biological quality of the protein being CM3 bar of lower quality. From a chemical and sensorial point of view CM1 bar shows the highest protein content (14.23%) and acceptability (6.8) and CM2 bar shows a high raw fiber content (2.27%).
