[The strength of evidence of the food inspection after the Chernobyl accident proven by whole body measurements of Basel students].

The radioactive contamination of the food consumed by the inhabitants of Basel after the Chernobyl fallout has been continuously controlled by our laboratory. The activity of ingested Cs-137 has been estimated and is compared here with the activity obtained through whole body counts. The satisfactory correlation between calculated and observed body activities enables an exact estimation of the people's doses applying the same model and demonstrate the reliability of the food control analysis.

Establishment of the PCR system specific to Salmonella spp. and its application for the inspection of food and fecal samples.

We established the PCR detection system specific to Salmonella species using Salmonella enterotoxin gene (stn). The detection limit was one bacterial cell per one gram of fecal and minced-meat samples using enrichment procedure by Tripticase soy broth or Salmonella enrichment broth, respectively. We concluded that this PCR system is useful for the practical application in the field of the public hygiene.

The occurrence and importance of residues in meat and their evaluation within official meat inspection.

Food of animal origin is an important factor in protecting the consumer from health risks emanating from the environment. This is why chemical and drug residues in food animals have been included in the Meat Inspection Act in the Federal Republic of Germany. The following substances are subject to regulation: Drugs; Feed additives; Pesticides; Toxic substances from the environment. While drugs may give rise to resistance of infective agents to them, feed additives may accumulate in the organism and have a toxic effect. Pesticides themselves may not be harmful in the amounts, which accumulate in meat, however, their metabolic products in the human body may be toxic. Radioactive substances and radioactive fall-out as well as cadmium and mercury are dangerous when accumulating in meat. Therefor, fixation of tolerance levels for defined residues has been started to be set according to the new Foods Act, including their toxicological evaluation. Condemnation of organs of slaughter animals in which these chemicals accumulate is obligatory.

The evaluation of the effectiveness of routine restaurant inspections and education of food handlers: restaurant inspection survey.

To determine restaurant inspection and food handler education practices in Canada, a survey of 141 jurisdictions was conducted. The response rate was 100%. All jurisdictions inspected restaurants, but the frequency of routine inspection varied from none to six or more times per year. The frequency of violations found on routine inspection was associated with foodborne illness. However, the frequency of inspection was not correlated with disease or with violations. Food handler education courses were mandatory in 32% of jurisdictions. Most courses were one to two days. No correlation was found between the numbers of individuals trained in the past year and violations or reported foodborne disease. This lack of reduction in reported foodborne illness may be due to the ecological nature of the survey or to the lack of effectiveness of food handler education or of routine restaurant inspections in reducing violations.
