A study was designed to determine the effects of substituting up to 50% of the NaCl in kimchi, a fermented Chinese cabbage (Brassica pekinensis) product containing scallions, garlic, ginger and hot red pepper powder, with KCl. Brine water (15% salt) used to soak cabbage contained NaCl:KCl ratios of 1:0 (control), 5:1, 2:1 and 1:1 (wt:wt). Total acidity and pH of kimchi reached acceptable ranges of 0.4-0.6% (as lactic acid) and 4.4-4.7, respectively, after 13 days of incubation at 13 +/- 1 degree C. Kimchi made using brine water containing 5:1 and 2:1 (NaCl:KCl) salt ratios was characterized by faster growth of lactic acid bacteria and total aerobic microorganisms compared to the control formulation. Sensory qualities (saltiness, bitterness, sourness, hotness and texture) of kimchi prepared from cabbage soaked in brine containing NaCl and KCl at all test ratios were judged to be acceptable.
Rat-embryo explants removed on day 10.5 of gestation were cultured for 48 hr in various concentrations of HgCl2, CH3HgCl or glutathione. Dose-related dysmorphogenesis and growth retardation occurred with increasing concentrations of HgCl2 (1-10 microM). Increasing concentrations of CH3HgCl (3-100 microM) produced a similar pattern of embryonic effects. The rat-serum incubation medium had no detectable level of reduced glutathione (less than 0.02 mM) and only 0.12 mM total sulphydryl groups. Reduced glutathione (60-300 microM) added to the incubation medium was relatively non-toxic. The addition of exogenous glutathione to culture medium containing HgCl2 partially antagonized the embryonic growth retardation and prevented most of the embryolethality observed in cultures to which only HgCl2 had been added.

The present study uses cell-attached patch-recording techniques to study the single-channel properties of Ca2+ channels in isolated salamander photoreceptors and investigate their sensitivity to reductions in intracellular Cl-. The results show that photoreceptor Ca2+ channels possess properties similar to L-type Ca2+ channels in other preparations, including (1) enhancement of openings by the dihydropyridine agonist, (-)BayK8644; (2) suppression by a dihydropyridine antagonist, nisoldipine; (3) single-channel conductance of 22 pS with 82 mM Ba2+ as the charge carrier; (4) mean open probability of 0.1; (5) open-time distribution fit with a single exponential (tau0 = 1.1 ms) consistent with a single open state; and (6) closed time distribution fit with two exponentials (tau(c1) = 0.7 ms, tau(c2) = 25.4 ms) consistent with at least two closed states. Using a Cl- -sensitive dye to measure intracellular [Cl-], it was found that perfusion with gluconate-containing, low Cl- medium depleted intracellular [Cl-]. It was therefore possible to reduce intracellular [Cl-] by perfusion with a low Cl- solution while maintaining the extracellular channel surface in high Cl- pipette solution. Under these conditions, the single-channel conductance was unchanged, but the mean open probability fell to 0.03. This reduction can account for the 66% reduction in whole-cell Ca2+ currents produced by perfusion with low Cl- solutions. Examination of the open and closed time distributions suggests that the reduction in open probability arises from increases in closed-state dwell times. Changes in intracellular [Cl-] may thus modulate photoreceptor Ca2+ channels.

Activities of heme oxygenase and tryptophan-2,3-dioxygenase and cytochrome P450 content in liver as well as absorption of the Soret band and optical density at 280 nm in serum were determined 2 and 24 h after administration of HgCl(2) and CoCl(2) and after co-administration of the metal salts with alpha-tocopherol. Administration of HgCl(2) and CoCl(2) increased the contents of hemolysis products in the serum, induced heme oxygenase, and decreased cytochrome P450 content in the liver. Injection of HgCl(2) increased the activity of tryptophan-2,3-dioxygenase holoenzyme and enzyme saturation with the heme, but administration of CoCl(2) decreased these parameters. Pretreatment with alpha-tocopherol completely blocked the changes induced by HgCl(2) after 24 h. Induction of heme oxygenase induced by CoCl(2) was not blocked by alpha-tocopherol, but this antioxidant normalized the increase in the level of hemolysis products in the serum and decrease in tryptophan-2,3-dioxygenase holoenzyme activity and cytochrome P450 content. Mechanisms of regulation of heme oxygenase by mercury and cobalt ions are discussed.
In Experiment 1, rats with chorda tympani nerve transection (CTX) acquired a LiCl-conditioned taste aversion to 0.1 M NaCl at the same rate as controls. After 3 conditioning trials, the aversion generalized to 0.03 and 0.3 M NaCl, but did not generalize to KCI (0.03, 0.1, and 0.3 M), in either the sham or CTX group. In Experiment 2, the sham group, but not the CTX group, formed an aversion to 0.1 M KCI after 1 trial. The CTX rats did form a moderate aversion after 2 conditioning trials. Following the 3rd trial, the CTX group did not suppress licking to 0.03 or 0.3 M KCI or any concentration of NaCl in relation to controls. Although there is strong evidence that CTX affects NaCl taste perception, these findings indicate that, under certain conditions, rats can nonetheless distinguish NaCl from KCI after such neurotomy. Moreover, CTX appears to have a substantial effect on the perceived intensity of KCl.
