[Current trends in the preservation of frozen fruits, as markers of hygienic quality of food].

Spore germination and growth rate of pathogens can be greatly reduced by cooling right after harvest. Most tropical or subtropical crops, and even some temperate, fruits undergo from chilling injury (CI) at temperatures considerably above their freezing point. Several procedures have been designed to increase tolerance to CI. Prestorage temperature conditioning can reduce CI in subsequent cold storage. Intermittent warming interrupting the chilling period by periods at nonchilling temperatures may become a practical treatment to prolong the storage of chilling sensitive crops. Modified atmospheres extend the postharvest life of fruit by reducing their respiration rate. The maintenance of fruit in good physiological condition may result in considerable disease resistance. A direct effect against pathogens is also possible at concentrations of O2 lower than 1.8% or concentrations of CO2 higher than 10%.

[Group immunity against tularemia in employees of the Zelenina Processing Plant in Brno].

The authors examined, using the tularin test of Soviet make a total of 1380 employees of 14 work places of the national enterprise Zelenina in Brno. These work places are concerned with the purchasing, storage, distribution and sale of fruit and vegetables, grown among others also in South Moravian areas contaminated with tularaemia. They detected a total of 71 positive reactions concentrated mainly among long-term workers of the main storage places and transport departments of eight plants, i.e. Boskovice, Prostĕjov, Brno-town, Breclav, Trebíc, Brno-rural area, Slavkov and Znojmo, where the total tularaemia immunity rate varied between 4.88 and 12.30%. The distribution of positive cases signalizes with a high probability the occupational character of thus retrospectively detected cases, similarly as in the sugar plants and in the enterprise Fruta where products from the above area are processed. The source of infection are most probably rodents and the medium of transmission is probably fruit and in particular vegetables from the South Moravian area with tularaemia. The author recommends to introduce provisions to protect workers with risk occupations and possibly also consumers buying these products in retail shops.

[Good Manufacturing Practice (GMP) in the food industry].

The GMP-Rules, which were formulated by the WHO in 1969, were passed into German national lay by April 1st, 1985 as "Betriebsverordnung für pharmazeutische Unternehmer". The aim of this law is to guarantee constant quality of medical supplies. The food producing industry is facing similar requirements formulated either within the Codex Alimentarius or within the Code of Hygienic Practice of FDA (General Requirements for Food Manufacture). The degree of realization for these concepts of quality assurance however is varying extremely between different areas of food production. The requirements with regard to buildings, production plants, process technology, distribution and personnel hygiene as well as the principles of the HAAC-concept are described using examples from soft cheese, milk powder- and sweets industry.
