Structural carbohydrate differences and potential source of dietary fiber of onion (Allium cepa L.) tissues.

Onion tissues of three varieties were evaluated for dietary fiber (DF) composition. Insoluble (IDF) and soluble (SDF) dietary fibers were subjected to acid hydrolysis, and the resultant neutral sugars, uronic acids, and Klason lignin were quantified. Brown skin exhibited the highest total dietary fiber (TDF) content (65.8%) on a dry matter basis, followed by top (48.5%) and bottom (38.6%), IDF being the main fraction found. The SDF:IDF ratio decreased from inner to outer tissues. Brown skin and outer leaves byproducts appear to be the most suitable sources of DF that might be used in food product supplementation. The chemical composition reveals that cellulose and pectic polysaccharides were the main components of onion DF in all tissues, although differences between them were noticed. An increase in the uronic acids/neutral sugars ratio from inner to outer tissues was found, suggesting that the galactan side chain shows a DF solubilization role.

Near-infrared imaging spectroscopy based on sugar absorption band for melons.

A method for visualizing the sugar content in the flesh of melons was developed. This method was based on the sugar absorption band in the near-infrared (NIR) region to avoid bias caused by the color information of a sample. NIR spectroscopic analysis revealed that each of the two second-derivative absorbances at 874 and 902 nm had a high correlation with the sugar content of melons. A high-resolution cooled charged couple device camera with band-pass filters, which included the above two wavelengths, was used to capture the spectral absorption image of a half-cut melon. A color distribution map of the sugar content on the surface of the melon was constructed by applying the NIR spectroscopy theory to each pixel of the acquired images.

Swelling of a lecithin lamellar phase induced by small carbohydrate solutes.

In this paper, we consider the effect of adding small carbohydrate solutes (small sugars) to DMPC (1,2-dimyristoyl-sn-glycero-3-phosphocholine) L(alpha) dispersions and the consequences on the force balance at zero osmotic pressure (maximal swelling). We show the importance of long incubations required to obtain samples at thermodynamic equilibrium where molecular diffusion has been completed. The monotonic increase of maximal swelling versus sugar content occurs as a combined effect of the screening of the van der Waals contribution and fluctuations in the lamellar stacks. According to this new approach, it is shown that changes in dielectric properties result in a much less pronounced effect than entropic forces (undulations) generated by the softening of the membranes at high sugar content. However, this sugar-induced swelling cannot be explained quantitatively by adding an entropic contribution to molecular interactions. Quantitative disagreement between the proposed mechanism and our observations is due either to nonadditivity of molecular interactions with entropic forces or to the relation used to account for the entropic contribution.
