The human Se status of 8 areas of Kaluga region was studied. The mean serum Se levels 94 mg/l was significantly lower in the south compared to the northern area 126 mg/l. Areas with radioactive pollution possessed higher percentage of persons with low serum Se concentration than in regions without the pollution. Negative influence of radiation on serum Se level was confirmed also by epidemiological data for workers of Chernobil NNP (65 mg/l-workers attending to the reactor and 69 mg/l-for other employees). The same phenomenon was observed for males of Tula region who had taken part in the liquidation of an accident on the Chernobil NNP compared to other inhabitants of Tula region (78 mg/l and 89 mg/l correspondingly). The lowest antioxidant status (serum vitamin E, C and Se concentrations) in towns of Kaluga region with radioactive pollution possessed males of less than 60 years old.
Male Wistar rats were fed selenium (0.2, 2.9 or 5.5 mg/kg of dry feed) in the form of selenomethionine. They also received for 6 weeks amidopyrine (33 mg/kg b.w.) and/or sodium nitrite (20 mg/kg b.w.) administered intragastrically. The quantitation of endogenously synthetized volatile nitrosamines in the stomach, selenium in the serum, biochemically evaluated nitrite and nitrosamines toxicity revealed an inverse relationship between feed selenium concentrations and the amount of endogenously produced nitrosodimethylamine from equal precursor doses. A protective selenium effect on methemoglobin-producing action of nitrite ions was established. It is shown that introduction of precursors induces increased body need in selenium.

Alimentary deficiency in riboflavin and/or iron in rats involved distinct decrease in excretion of 4-pyridoxylic acid and 1-N-methyl nicotinamide--the metabolites considered as the indices of vitamins B6 and PP consumption. The effect observed appears to occur due to a decrease in activity of some iron- and flavin-containing enzymes participating in the metabolism of pyridoxine and niacin. Addition to the diet of the deficient component normalized these patterns. Use of the data on excretion of 4-pyridoxylic acid and 1-N-methyl nicotinamide as criteria of consumption of pyridoxine and niacin is discussed.
Correlation of actual consumption of vitamins B1, B2 and B6 with biochemical parameters of their utilization has been studied in two groups of workers (one group was engaged in the synthetic leather industry, the second one in the diamond treatment industry). It is shown that the actual utilization of vitamins B1, B2 and B6 correlated well with the stimulation coefficients (SC) of the basal activity of the corresponding erythrocytic enzymes. This correlation can be expressed in an equation of linear regression with a preset SC. Solution of this equation gives the values that can be used in the diagnosis of changes in the vitamins B1, B2 and B6 requirement in certain population groups. The results of the study evidence that vitamin B1 and B6 are especially necessary for workers whose activity is associated with manifest nervous-emotional stress, while the workers engaged in the synthetic leather industry being exposed to dimethyl formamide are in need of vitamin B2.

Workers engaged in industrial treatment of diamonds manifested deficient supply of ascorbic acid, thiamine, riboflavin, pyridoxine and niacin in spring and autumn. This was ascertained on the basis of studying actual nutrition and specific indicators of the content of vitamins or their catabolites in the urine and blood and determination of metabolic functions of some vitamin-dependent enzymes.

The main foodstuffs were tested for selenium levels in the Ural economical district. Mean Se concentrations were found as follows (in microgram/kg): 166-169 in wheat flour, 62.5 in rye flour, 351 in white bread, 271 in rye bread, 165 in beef, 129 in pork, 324 in local fish, and 932 in dry milk. Se levels were high in some sea products and local mushrooms as well.
The studies performed by the authors show that 85-92% of nitrates and 53-60% of nitrites from the overall ration are taken with vegetables and meat products, respectively. An approximate daily supply of nitrates with food and water has been calculated for workers, employees and pensioners living in Moscow. The values obtained do not surpass the permissible daily dose of nitrates set up by the experts of the Carcinogenic Substances Committee at the Ministry of Health.
