Kosher dietary laws and children's food preferences: guide to a camp menu plan.

Assessment of the food preferences of Jewish children and experience with the kosher dietary laws facilitated the planning of a summer camp menu. A lengthy list of foods was developed that satisfied the tastes of the campers. Recipes were modified to achieve greater value in the kosher menu. Both the children and the camp administration appreciated seeing the survey results implemented as an eight-week cycle menu. Dietitians have a responsibility to understand the cultural needs and food preferences of those whom they serve. An appreciation of ethnic and religious dietary patterns is essential in menu planning. Knowledge of the laws of kashruth and familiarity with kosher products, traditional Jewish foods, and taste preferences of Jewish children and adults are necessary to the dietitian wishing to please Jewish clientele.

Glucaric acid excretion. Analysis of the enzymatic assay and findings in smokers and non-smokers.

Glucaric acid (GA) excretion in urine from cigarette smokers and non-smoking control subjects was determined enzymatically. There was no difference between GA 41.0 +/- 3.2 mumol/g creatinine (Cn; mean +/- SEM) in smokers and GA 43.1 +/- 3.4 mumol/g Cn in the controls. Gas chromatographic analysis of the GA-glucarolactone equilibrium was carried out in an attempt to elucidate the striking discrepancies in previous results.

[First experiences by use of peracetic acid aerosols in creches (author's transl)].

Peracetic acid is more and more used for the purpose of air desinfections in rooms. The examinations of DWORSCHAK and LINDE encouraged us to use peracetic acid in the rooms of creches in presence of children systematically. The applied concentration of peracetic acid is 4.6 mg/m3. With these examinations it was intended to prove if it is possible to influence the morbidity of acute respiratory diseases. Under the choosed conditions no side effects are observed over a time of twenty weeks. Publications concerning cocarcinogetic activity of peroxy compounds induced us to make a preliminary stop in the application of peracetic acid in presence of children. The number of diseases specially of respiratory diseases in the time of the examinations was very small. That concerns the examination groups and those compared with these. But nevertheless it is to be seen that the morbidity in the groups with application of peracetic acid is 3.5% and in the others 11.20%. The differences are significant. If the results concerning cocarcinogetic activity of peroxy compounds will be shure it is to decide whether the room desinfections will be continued in presence of children or not.

Undergraduate medical education in geriatrics: nursing home experience.

Preclinical medical students undertook an elective course in geriatrics which combined instruction in history taking, physical diagnosis, and problem-oriented assessment of elderly patients in a nursing home. A drug utilization review and specific drug therapy plans were formulated by pharmacy students. The project identified general problems susceptible to institutional as well as individual remedy. The students were led beyond their initial preoccupation with "physical complaints" to interest in pertinent psychological, social, and economic factors. A model of geriatric education for health science students can productively link the health science center and community nursing homes with benefits for the student, the patient, and the nursing home.
