Cumulation NOx in foodstuffs and raw materials of animal origin.

In recent years quality of all raw materials processed by agricultural-food industry complex has been influenced by penetration of contaminating hazardous substances into the food chain as a result of high chemization, as well as by the exhalation fall-outs of industrial enterprises. In our study we followed the cumulation of nitrates and nitrites in food and raw materials of animal origin in the exposed industrial area of East Slovak Ironworks in Kosice. Determined were the residual levels of nitrates and nitrites in meat and organs of slaughterhouse cattle, milk and water from individual agricultural enterprises. Consistent control of the content of these hazardous substances in foodstuffs of vegetable and animal origin, water, soil and air represents a considerable contribution from viewpoint of consumer protection.

Determination of staphylococcal enterotoxins in milk and milk products by three methods.

For food evaluation, the determination of the number of Staphylococcus aureus colonies is insufficient in the view of present scientific knowledge. The results, advantages and disadvantages of diagnostic methods are demonstrated on an example of three methods of detection of staphylococcal enterotoxins in milk and milk products. 133 strains were investigated with the method of biotyping of Staphylococcus aureus strains. Four of their strains were included in biotype A, seven strains of S. aureus were not included in any biotype and the other strains belonged in biotypes C and E. This method can be used as an auxiliary method for evaluation of foods containing S. aureus bacteria. The agar-gel precipitation method of enterotoxin detection in isolated strains of Staphylococcus aureus has just restricted valiability. When examining 96 strains of S. aureus with this method, strains which were producing staphylococcal enterotoxins were isolated 17 times. The main disadvantage of this method is a fact that the result concerning the isolated strains need not be identical with the result of enterotoxin detection in food. Direct assays of staphylococcal enterotoxins in milk and milk products using an enzymoimmunological method (ELISA test) seem to be most promising, mainly due to their high sensitivity (0.0001-0.001 micrograms.ml-1) and other advantages.

The dental amalgam issue. A review.

Using an interdisciplinary approach, the current position in the dental amalgam controversy and the potential impact of amalgam mercury on human health are reviewed. Aspects of materials science, corrosion, mercury exposure, toxicology, neurology and immunology are included. New data on mercury exposure from corroded amalgam fillings in vivo are presented. The exposure can reach levels considerably over known threshold limit values. Also, measurements of mercury absorption from intraoral air are presented. The vital importance of avoiding a galvanic amalgam-gold coupling is emphasized. The symptomatology of a disabled patient, who recovered after amalgam removal, has been included. It is concluded that discussion of the dental amalgam issue has suffered from the lack of an interdisciplinary approach. It would be wise to learn from the lesson of acrodynia, and consider amalgam mercury among other possible factors in neurological and immunological diseases of unclear etiology.

[Microbiological quality of mechanically deboned beef].

Microbial quality of mechanically deboned beef (MDB), which was obtained by the discontinuous hydraulic horizontal separator, type Inject-Star (firm LASKA, Austria), was analyzed for the presence of indicatory microorganisms (coliforms and enterococci), pathogenic and conditionally pathogenic microorganisms. The basic microbial parameters have been determined separately for MDB of 1st, 2nd degrees as well as for average daily samples from one collecting vessel. Apart from it, also a raw material (beef from flesh bones intended for separation) and salt MDB after 24 hrs storing in chiller before working it into meat products were examined by the same way. From our results it follows that the number of all microorganisms observed in MDB of 1st degree was lower than that of 2nd degree. During the separation process the increase of microbial parameters compared with those in initial raw material occurred by 1-2 radices and following subsequent salting and storing in chiller there was a repeated decrease by 1 radix (with exception of the number of Staphylococci remaining unchanged). The change in the amount of microflora present was also influenced by season--in summer there was an increase by about 1 radix. From the view point of food hygiene the finding of salmonellas and the presence of large number of Staphylococci including Staphylococcus aureus on average 10(5).g-1 as well as the presence of wide extent of conditionally pathogenic microorganisms from the family of Enterobacteriaceae, especially from genera Proteus, Providencia, Morganella and Citrobacter are of great importance.

[Occurrence of PSE and DFD meat in swine slaughtered under emergency conditions].

The occurrence of qualitative changes in meat was studied in a set of 1008 pigs slaughtered in four sanitation slaughter houses for the period of 12 months. PSE meat was found in 206 pigs (20.43 per cent) and DFD meat only in 9 pigs (0.89 percent) of the total number of pigs examined. The rule was applied that the defect should be demonstrated by two of three commonly used parameters (the pH value, colour and water loss by dripping). The highest occurrence of qualitative changes in meat of PSE type was registered in the group of animals with a defect of the respiratory organs (32.53 per cent) and the lowest in animals with diseases of sexual organs, including parturition complications (5.00 per cent). A similar trend was recorder even in the DFD meat occurrence. As to the seasons, the highest percentage of occurrence of PSE defects was in July and August (35.41 and 29.06 per cent) and the lowest (8.64 and 10.97 per cent) in March and January. The actual disease is proved to be only one of the secondary stress to induce the PSE meat formation.

[A method of extraction in the detection of residual inhibiting substances in the tissues of pigs and calves after unavoidable slaughter].

Differences were studied in detecting residues of inhibitory substances in tissue samples of pigs and calves after emergency slaughter. Samples of liver, heart, kidney and muscle of 30 pigs and 16 calves were examined. Solid samples of organ tissues placed on an agar medium and extracts of the solid samples placed into agar pits were used for detection. Samples were parallelly subjected to the microbiologic diffusion method, using the S. aureus CCM 2022 and B. subtilis CCM 1999 microorganisms. The method of obtaining the extracts from solid samples of the organs was proposed and tested at our own workplace. The presence of inhibitory substances was displayed by the formation of inhibition zones. Results of the positive samples in calves (7 samples) and in pigs (3 samples) point out explicitly to the fact that the extracts of the tissue samples display positively larger inhibition zones in comparison with the solid samples. B. subtilis was demonstrated to be more sensitive than S. aureus, comparing the used microorganisms.

[Biological value of proteins in PSE meat].

A bioassay was made on male SPS Norway rats of the Wistar strain to study the biological value of PSE meat protein in a ten-day trial. Pork meat of m. longissimus dorsi was denoted as PSE meat on the basis of low pH1 values, colour and water content. Raw meat and thermally treated meat was used for feeding (thermal treatment: 75 degrees C for 60 min). The biological value of altered meat (thermally treated products), expressed on the basis of PER, NPU and LPU values, draws attention to the difference from the biological value of normal meat. However, no such a difference was recorded in PSE meat administered in raw condition.

Dental mercury--a public health hazard.

The aim of this review is to point out the health hazards of the uncontrolled global use of implanted mercury-leaking dental amalgam fillings. In spite of the pandemic use of amalgam, most dentists and doctors are still ignorant about the levels of mercury exposure and its health implications. This review discusses the following chronically neglected aspects in clinical practice: The use of materials science in calculating the mercury exposure levels, which may exceed the TLVs by an order of magnitude; Microbial dissolution and methylation of mercury from amalgam by oral and intestinal bacteria; Diagnostic problems and effects of chronic mercury exposure with emphasis on intestinal, cardiovascular, mental and neurologic symptoms and disorders; Diagnostic value of faeces--instead of urine examination--as the main indicator of Hg exposure; Lack of control groups unexposed to Hg (amalgam free) for epidemiologic investigations of health problems; Contribution of dental mercury to environmental pollution. In conclusion, a lack of interdisciplinary research and of a critical approach to established clinical routine appears to be the reason for the failure of the dental profession to protect the patient from Hg exposure when saving the tooth.
