A survey was carried out on the occurrence of Vibrio parahaemolyticus on fish and shellfish, as sold in The Netherlands.THE OPTIMAL MODE OF DETECTION OF THIS BACTERIUM APPEARED TO BE: (i) enrichment of swabs taken from the surface and the gills in freshly prepared meat broth with 5% NaCl; (ii) streaking onto Teepol bromothymol blue agar (BTB) and taurocholate bromothymol blue sucrose agar (TCBS); (iii) confirmation of suspect colonies by testing for mode of growth in butts/slants of a Kligler type glucose sucrose iron thiosulphate agar, formation of indole in 2% NaCl 2% trypticase water, anaerobic utilization of starch in the presence of 5% NaCl and oxidase reaction according to Kovacs (1956).A total of 407 samples, stemming from 17 types of fish and shellfish, taken at three fish shops, was examined by this technique. Only one specimen, i.e. a haddock, was found to contain V. parahaemolyticus. This contamination rate of approximately 0.3% correlates well with data found earlier for fish landed in Northern Germany.

Samples of dried foods, feeds, and drugs were examined for Enterobacteriaceae by using buffered glucose-Brilliant Green-bile broth as the final enrichment medium and deep tubes of violet-red-bile-glucose-agar for confirmation. The pre-enrichment treatments used for the resuscitation of sublethally impaired cells were overnight incubation in lactose broth versus incubation for 1 to 6 hr at room temperature in shallow layers of tryptone soya peptone broth. The latter restoration treatment appeared to be significantly more productive.

For the enumeration of vegetative cells and spores of Bacillus cereus in foods, a mannitol-egg yolk-phenol red-agar has been developed which exploits the failure of B. cereus to dissimilate mannitol, and the ability of most strains to produce phospholipase C. When a high degree of selectivity was required, polymyxin B sulfate in a concentration of 10 ppm appeared to be the most effective selective additive. Useful characteristics for the identification of presumptive isolates of B. cereus were found to be: morphology, dissimilation of glucose mostly to acetyl methyl carbinol under anaerobic conditions, hydrolysis of starch and gelatin, reduction of nitrate, and growth on 0.25% chloral hydrate agar.

The cholera-pandemic raging in South and Middle America and endemic cholera in other countries call for measures of health protection of the local population, but particularly with respect to the young, old, pregnant and immunocompromised citizens of countries importing food from the areas where the disease has struck. Instead of harshly barring importation, a more humanitarian policy is recommended, relying on assistance of areas presenting risks, with the introduction of and adherence to rigorous measures of longitudinally integrated microbiological safety assurance. This model is equally applicable to other enteric diseases transmitted by food. Examples are given of how canned foods of neutral pH, fishery products, vegetables and certain fruits should be processed for safety. Importation monitoring strategies, linked to this proactive approach to consumer protection, are briefly summarized.
